Inbox folders, custom sorting rules (somewhat like GMail's inbox tabs)
GMail offers a very useful tool for sorting emails, through the inbox folders (Primary, Social, Promotions, Updates, Forums, etc)
It would be awesome to have a similar, perhaps more customizable feature in ProtonMail! Perhaps the ability to create and name custom folders and set rules to direct emails containing <x> string in the subject, body, and sender address to a designated folder. Perhaps this could even be done through tags, by implementing an auto-tagging feature, or both the former and latter.

This is the one thing holding me back from Protonmail at the moment. I get too much email to create and manage filter rules for all of it.
Gmail automatically groups it by tab (priority, promotions, updates, etc.), and gives you a preview of what the most recent/most important emails are within that tab.
Without it, it is too easy to miss important emails in the deluge of automatic emails that you still need to receive, but not take over.
Telling us to go back to custom filter rules is, imo, not the answer if you want normal people to switch to proton mail from gmail. But clearly this is a hard problem to solve

Automatic sorting would be great. So then people can add to the basic initial category sorting,

This is a must.. TBH i have a few custom domains and would like to setup more within my account. A few things stop me. All emails go to one inbox.. which is a pain, should be separable by domain. Also the label thing is good but adding custom folders and rules to them folders would be much better.
My only other suggestion, is allowing the creation of other user logins for user2@customdomain.com because at the moment I have to manually distribute. I really want to sell this solution to my business clients too but at the moment it isn't suitable
