Selectively toggle email tracking protection
Currently, the only way to toggle email tracking protection is a single toggle in preferences, an all-or-nothing option that is not very useful due to how broad it is. Just like ad blockers can be toggled per web page, or NoScript can be toggled per domain, it would be nice if the trackers could be toggled per email. Sometimes I want to quickly view an email just to see what it is about without announcing to whoever sent it that I read it, but other times, such as with certain newsletters, I do want to announce to whoever sent it that I read it so that their analytics know that this kind of email is relevant. So it would be nice if trackers could be easily, selectively loaded on the fly, rather than only as a single option, so that this kind of granular control of whether one knows you read the email or not is possible.

I think this would be useful. Possibly trackers could be selectively toggled by URI? For example, GitHub sends notification emails with trackers with a URI like: https://github.com/notifications/beacon/<identiier>.gif
When the tracker is activated, the notification is cleared from the website, since you've already read it in your email.
