I came here to ask for that. I trust Apple's end2end encrypted services (iCloud+). It looks like the new Siri AI and Spotlight will be much less useful if email is out of bounds for it. That cuts across all devices, of course (iOS, iPadOS etc). Since I already use Proton Mail Bridge on macOS, I guess it works there?
