an option to switch the signature on and off
I would be nice to have an option for signature usage. I would like to be able to specify when my signature is used. For example, new emails - use the signature, for reply emails - don't use the signature. I currently am deleting the signature on reply emails.

I would like this option. I especially would like the option to automatically turn off signatures on replies. But then also having an "insert signature" option would be great.

I would like to be able to write a textual signature plus my degree and license number at the bottom of my messages

It would be nice to have a settings switch to only insert your signature on the first email of a conversation, and not on every reply - forcing you to manually delete it if you do not want it on every reply.

In the mobile version you can switch the signature on and off. There should be the same in the web version.

In signing the mail, I mean electronic signature, and not textual at the bottom of the message.

Useful indeed, but I haven't got enough votes. I think this would be more useful if you could choose between several stored signatures. I found myself just deleting the signature all together because I write e-mails in different languages, for different purposes etc and therefore often have to change them. I can see this being useful for someone with a long signature, or several long signatures.
