I'm a new Proton user.

I strongly dislike icons, as I have no idea what any of them mean, and I have no desire to learn what they mean. Mousing over them one by one is arduous.

In GMail, I have always kept the setting for Button Labels set to “text”, not “icons”.

Is this feature available in Proton Mail too, and I just don't see it? It's a deal-breaker for me.

To elaborate on my perspective, written language is our most sophisticated technology, able to clearly express any thinkable thought using only 26 letters. By contrast, icons are a regression to pictographs. Civilization abandoned pictographs for written language, and I hope we can preserve that historical development — at least in the Proton Mail UI.
