I agree with almost everybody here. It's simply not acceptable, that a mail program which sells itself as professional doesn't allow the user to change the font and size. Besides the options of fonts are far to few.
However, for my own part I partly solved the problem. I simply added a "Hi" and a few other letters above my automatic signature, and changed the whole thing into my favorite font, size and color between the options offered by Protonmail. When I compose an e-mail, all the rest of the text turns into the same formatting
