This is an incredibly important feature that I use as well. I also use it for several mailing lists that I'm subscribed to. This is something that I routinely use in Thunderbird.

Fastmail allows this, and depending on the address it was initially sent to, already sets the sender identity for you.

Alongside that, the ability to set signatures on a per-sender basis would be great, as my Gmail signature is different than my Fastmail, which is different than my personal domain.

This was requested almost 5.5 years ago. Has there been any movement on this? This alongside the inability to forward emails from sieve scripts was a huge blocker for me to use Proton as my primary email account at the personal level.

This is supported in Fastmail and it makes keeping your archives neat and clean so much nicer.
