One of my most frustrating issues is when, with a stroke of the keyboard or a slight movement of the mouse, something triggers the loss of a paragraph or even the entire email and there is no way to get it back! I have to write the entire text over again; sometimes, when I am deeply concentrated upon a response to someone and have written them something clinically meaningful for their case, some or all of the text disappears due to my having done something, and once it is gone, rewriting it is not always allowing me to express myself in the same manner. It has gotten to the point where (if very important and precise), I have taken to writing the text on Word, and then copy/pasting it onto the Proton email I want to send so as to avoid the possibility that it will all disappear. It's not Proton's issue that I manage to delete something from the email, however unintentionally, but a simple undo/redo button would mean a lot of time will go unwasted and without frustration.
