Or, another option would be to allow multiple inboxes based upon the address and allowing to set the default email From address for that inbox. This seems like an extension of the rules model as incoming mail would come into an inbox (a folder) based upon the rule that determines delivery for that To (incoming) email address. By selecting a given inbox, it would use the email address set up as the default for that inbox.

For users transitioning from a model of multiple email accounts (all with a single address -- and, thus, never had a reason to check the From address before sending) to a model of a single account (with multiple email addresses), something here would be very, very, helpful.
I'm one of those who have had 10+ email addresses in the Google model but each was a separate account; I never bothered to check the From address; it was implicit in working in a given account.
Having ditched Google and come over to Proton, I now have a single account with multiple addresses -- and have, more than once, sent an email with a From address (the default) which was not what I intended.
In my case, I use particular email addresses for communicating with particular categories of people/companies. (Otherwise, what is the purpose of having multiple email addresses?) Being forced to select the from address at the time of creating/sending the email would be a real help to keep me from forgetting to check before hitting send.
BTW: I really like the idea of the check box to have NO email selected by default when creating new email.

Totally agree. The old page where you could actually MANAGE your contacts was needed. I can't believe it was totally taken way in favor of the widget panel. The panel access is fine for casual contact add or change but when working with lots of contacts it is REALLY A PAIN!
