Currently there is no accessible font available on Proton Docs, which is highly limiting for those with common neurodevelopmental conditions like dyslexia.
I wanted to specifically recommend Lexend, as it is dyslexia friendly, looks professional, and is open-source so would not incur licencing costs to Proton unlike some alternatives.
Edit: I've not come across the Atkinson font family before. It's probably a better alternative to lexend as it comes in more styles and weights.
