Scramble my email address
It would be nice if I could scramble my email address, and give a unique email address to each service, so I can know who is leaking it if I get spammed.

Proton bought SimpleLogin (https://simplelogin.io/) which has the exact purpose you are requesting and they've also added email aliasing functions in Proton Pass.
