Use Proton Drive as primary storage, with the ability to save and edit files from software such as MS Office, Adobe, etc directly via the drive without using a local HDD

This Is a good idea. MS office fights hard to get you to store files “locally” which are automatically sync’d to onedrive. It defeats the purpose of having secure storage.
